Fresh Burgundy Truffle (Tuber uncinatum), also known as the autumn truffle, is a seasonal European truffle with an earthy woodland aroma, firm texture and characteristic nutty flavour. Its versatile profile makes it suitable for pasta, risotto, eggs, potatoes, sauces and refined meat dishes.

Terra Ross A Grade truffles are individually inspected and selected for freshness, firmness, maturity, good overall shape and culinary suitability. Choose the required total quantity from the available pack-size options.

What A Grade Means

A Grade provides a balance between attractive natural presentation and culinary versatility. The selection consists predominantly of whole, firm truffles with generally regular natural shapes, while allowing a limited proportion with superficial scratches, clean cuts or minor breakage.

Up to 30% of the total product weight may consist of truffles showing these permitted physical variations. Truffles showing softness, decay, serious deterioration or visible insect infestation are not accepted.

A Grade is suitable for restaurants, professional kitchens and home cooks who require fresh truffles for shaving, slicing, grating and general culinary preparation without requiring the premium visual uniformity of EXTRA Grade.

Commercial grade primarily describes size, shape and physical condition. Aroma intensity varies naturally according to maturity, freshness, seasonal conditions and the individual harvest.

Individual Truffle Size

Individual truffles generally weigh approximately 15–100 g and measure approximately 3–8 cm in diameter. Because truffles develop naturally underground, variation in weight, diameter, shape and surface appearance is expected.

The selected product quantity refers to the total weight supplied rather than the exact number of individual truffles included in the order.

Aroma, Flavour and Texture

Fresh Tuber uncinatum has an earthy and woodland aroma with characteristic nutty, mushroom-like and savoury notes. The interior is typically dark brown with fine pale marbling, although its exact colour and pattern vary naturally between individual truffles.

The texture should be firm when fresh. Its aroma becomes more noticeable after slicing, shaving or grating, particularly when served with warm ingredients containing butter, cream, eggs or mild cheese.

How to Use Fresh Burgundy Truffle

Clean the truffle gently shortly before use. Slice, shave or grate it thinly and add it near the end of preparation or immediately before serving. Gentle warmth can help release its aroma, but prolonged cooking and intense direct heat should be avoided.

Recommended culinary uses include:

  • shaved or sliced over fresh pasta and risotto;
  • served with scrambled, poached or fried eggs;
  • paired with potato purée or roasted potatoes;
  • combined with butter, cream and mild cheeses;
  • served with mushrooms and seasonal vegetables;
  • paired with poultry, veal, beef or game.

For a balanced result, use restrained seasoning and avoid ingredients that may overpower the natural aroma of the truffle.

Freshness, Packing and Delivery

Storage After Delivery

Refrigerate immediately at 2–6°C in a clean, dry, food-safe container. Replace absorbent paper daily and use promptly because fresh truffles naturally lose moisture and aroma over time.
