Fresh Black Winter Truffle (Tuber brumale) EXTRA Grade is a wild-harvested selection of larger whole specimens chosen for their visual presentation, suitable physical condition and practical culinary use.

What EXTRA Grade Means
EXTRA Grade is a physical commercial selection. Individual specimens in this product generally weigh approximately 10–30 g and measure approximately 2–5 cm in diameter.
The specimens are selected for a comparatively regular whole-truffle presentation. Minor natural irregularities, superficial cuts, scratches and surface variation may still occur because truffles develop naturally underground.
Commercial grade primarily describes size, shape, wholeness and physical presentation. It does not guarantee a stronger aroma, flavour or maturity level than another grade of equal freshness and maturity.

Individual Truffle Size
Individual specimens generally weigh approximately 10–30 g and measure approximately 2–5 cm in diameter. Natural variation in weight, diameter, shape and surface appearance is expected.
The selected pack size refers to the total net weight supplied rather than the exact number of individual specimens included in the order.
Appearance, Aroma and Texture
Fresh Tuber brumale generally has a dark brown to black exterior with a naturally textured surface. The interior may range from dark grey to black and is crossed by pale branching veins. Exact colour, marbling and internal development vary naturally between individual specimens.
The aroma and flavour are characteristic of fresh Black Winter Truffle. Their intensity and exact profile vary according to maturity, freshness, growing conditions, season, handling and the individual harvest. The texture should be firm when fresh and in suitable condition.

How to Use Fresh Black Winter Truffle
Clean the truffle gently shortly before preparation. EXTRA Grade specimens are particularly suitable for thin slicing, grating, tableside presentation and recipes where the appearance of the whole truffle is important.
Recommended culinary uses include:
- thin slicing over pasta and risotto;
- egg and potato dishes;
- butter and cream-based preparations;
- mild cheeses;
- refined sauces;
- restrained meat dishes;

Freshness, Packing and Delivery
Fresh truffles are inspected, wrapped in absorbent paper and placed in food-safe protective packaging. Orders are dispatched using Express Delivery in Insulated Packaging with cooling materials where appropriate.
The insulated packaging is designed to help protect the product during transit but does not constitute a continuously monitored or guaranteed refrigerated cold chain. Available delivery services and estimated transit times are shown at checkout for the selected destination.
Storage After Delivery
Refrigerate immediately at approximately +2°C to +4°C. Wrap each specimen in clean, dry absorbent paper and place the truffles in a clean, closed glass container. Replace the paper every day or whenever it becomes damp and inspect the specimens regularly.
For the best aroma, flavour and texture, consumption within approximately 5–8 days is generally recommended, depending on the condition of the product when received. This is general guidance rather than a guaranteed shelf life.
