Fresh Black Winter Truffle (Tuber brumale) B Grade is a wild-harvested selection intended primarily for cooked preparations. The specimens may have irregular shapes, surface cuts, scratches and natural variation while remaining suitable for sauces, fillings, truffle butter and recipes in which the truffle is chopped, grated or infused.

What B Grade Means

B Grade is a physical commercial selection. Individual specimens in this product generally weigh approximately 1–7 g and measure approximately 1–2 cm in diameter. They may have cuts, scratches, irregular shapes and natural surface variation.

This grade is particularly suitable for sauces, fillings, truffle butter, egg dishes, pasta and other cooked preparations where uniform whole-truffle presentation is not essential.

Commercial grade primarily describes size, shape, wholeness and physical condition. It does not guarantee a particular aroma intensity or maturity level. Aroma varies naturally according to maturity, freshness, growing conditions, season and individual harvest.

Individual Truffle Size

Individual specimens generally weigh approximately 1–7 g and measure approximately 1–2 cm in diameter. Because truffles develop naturally underground, variation in weight, diameter, shape and surface appearance is expected.

The selected product quantity refers to the total net weight supplied rather than the exact number of individual specimens included in the order.

Appearance, Aroma and Texture

Fresh Tuber brumale has a dark brown to black outer surface with a naturally textured and irregular appearance. The interior may range from dark grey to black and is crossed by pale branching veins. Exact colour, internal development and marbling vary naturally between individual specimens.

The aroma is characteristic of fresh Black Winter Truffle and may vary in intensity according to maturity, freshness, season, handling and the individual harvest. The texture should be firm when fresh and in suitable condition.

How to Use Fresh Black Winter Truffle

Clean the truffle gently shortly before use. Depending on the recipe, chop, grate or slice the specimens and add them to sauces, fillings, truffle butter, egg dishes, pasta or other cooked preparations.

Freshness, Packing and Delivery

Fresh truffles are inspected, wrapped in absorbent paper and placed in food-safe protective packaging. Orders are dispatched using Express Delivery in Insulated Packaging with cooling materials where appropriate.

Storage After Delivery

Refrigerate immediately at approximately +2°C to +4°C. Wrap each specimen in clean, dry absorbent paper and place the truffles in a clean, closed glass container. Replace the paper every day or whenever it becomes damp and inspect the specimens regularly.

For the best aroma, flavour and texture, consumption within approximately 5–8 days is generally recommended, depending on the condition of the product when received. This is general guidance rather than a guaranteed shelf life.
