A Grade Black Winter Truffle for Slicing and Refined Dishes

Fresh Tuber brumale A Grade specimens are selected for whole-truffle presentation, firm condition and practical size for slicing, grating and refined culinary use. Individual truffles typically weigh approximately 7–20 g and may vary naturally in shape, surface texture, interior colour and marbling.

Species and Natural Characteristics

Tuber brumale, commonly known as the Black Winter Truffle, is a distinct European truffle species that matures during the colder part of the year. Mature specimens generally have a dark brown to black textured exterior and a dark grey to black interior crossed by pale branching veins.

Aroma, flavour, colour and marbling vary according to maturity, freshness, growing conditions, origin and the individual specimen. Tuber brumale should not be confused with Black truffle – Tuber melanosporum.

Culinary Uses

A Grade Black Winter Truffle specimens are suitable for slicing or grating over pasta, risotto, eggs, potatoes, butter, cream-based sauces, mild cheeses and restrained meat dishes. They may also be finely chopped for sauces, fillings and other warm preparations.

Add fresh truffle shortly before serving or use gentle warmth to help release its aroma. Avoid prolonged cooking and intense direct heat.

Storage and Preparation

Refrigerate promptly at approximately +2°C to +4°C. Wrap each specimen in clean, dry absorbent paper and place it in a clean, closed glass container. Replace the paper daily or whenever it becomes damp.

Clean shortly before preparation with a soft food-safe brush. Use a small amount of cold water only when necessary and dry thoroughly. Avoid prolonged soaking, aggressive scrubbing and unnecessary removal of the natural surface.

For the best aroma, flavour and texture, consumption within approximately 5–8 days is generally recommended, depending on condition upon arrival. This is general guidance, not a guaranteed shelf life.

Packing and Delivery

Fresh specimens are individually inspected, wrapped in absorbent paper and placed in food-safe protective packaging. Orders use Express Delivery in Insulated Packaging with cooling materials where appropriate.
