EXTRA Grade Périgord Black Truffle for Tableside Presentation

Fresh Black truffle (Tuber melanosporum), also known as the Périgord Black Truffle, is valued for its earthy aroma, firm texture and dark interior with fine pale marbling. It suits pasta, risotto, eggs, potatoes, sauces and refined meat dishes.

The main European season generally runs from December to March. Exact timing, maturity and availability vary by region, weather and harvest conditions.

What EXTRA Grade Means

EXTRA Grade is the highest presentation grade within the seasonal harvest. It consists of whole, firm specimens with predominantly rounded or regular natural shapes and no serious visible defects. It suits premium displays and tableside service where whole-truffle appearance matters.

Individual Truffle Size

Specimens generally weigh approximately 20–100 g each and measure around 3–7 cm in diameter. Natural variation in weight, shape and surface appearance is expected. The selected quantity refers to total supplied weight, not an exact number of truffles.

Appearance, Aroma and Texture

Fresh Tuber melanosporum has a dark brown to black surface with small polygonal warts. At maturity, the interior is brown to nearly black with fine branching pale veins. Colour and marbling vary naturally.

Its aroma may include earthy, woodland, nutty, cocoa-like and savoury notes. The texture should be firm when fresh. Slicing or shaving over gently warmed butter, cream, eggs or mild cheese helps release the aroma.

How to Use Fresh Black truffle

Clean shortly before use, then slice, shave or grate thinly and add near the end of preparation or before serving. Gentle warmth can release the aroma; avoid prolonged cooking and intense direct heat.

  • Shave over pasta, risotto, eggs or potatoes.
  • Combine with butter, cream or mild cheeses.
  • Use in restrained butter- or cream-based sauces.
  • Serve with poultry, veal, beef or game.

Freshness, Packing and Delivery

Fresh truffles are inspected, wrapped in absorbent paper and placed in food-safe packaging. Orders use Express Delivery in Insulated Packaging with cooling materials where appropriate. This helps protect the product in transit but is not a continuously monitored cold chain. Delivery options and estimated times are shown at checkout.

Storage After Delivery

Refrigerate immediately at approximately +2°C to +4°C. Wrap each specimen in clean, dry absorbent paper and place it in a closed glass container. Replace the paper daily or whenever damp and inspect regularly.
