Season and Availability
The main European season for fresh Tuber melanosporum generally runs from December to March. Exact harvest dates, maturity and availability vary according to the producing region, weather and current seasonal conditions.
What B Grade Means
B Grade is a practical culinary selection intended for slicing, grating, chopping, sauces, fillings and preparations in which premium whole-specimen presentation is not essential. These permitted physical variations affect appearance and the most suitable method of preparation but do not change the declared species. Specimens showing softness, decay, serious deterioration or visible insect infestation are not accepted.
Individual Specimen Size
Individual B Grade specimens generally weigh approximately 5–15 g and measure around 1–3 cm in diameter. Because Tuber melanosporum develops naturally underground, variation in weight, diameter, shape, surface texture and appearance is expected.
Aroma, Flavour and Texture
Fresh Tuber melanosporum typically has a deep earthy and woodland aroma with savoury, nutty and mildly musky notes. Its aromatic profile may also develop subtle cocoa-like characteristics, depending on maturity and the individual harvest.
The interior is generally dark brown to nearly black and crossed by fine branching pale veins. Exact colour, marbling and aromatic intensity vary naturally between individual specimens.
How to Use Fresh Black Truffle
Clean each specimen gently shortly before use. Depending on its individual size and shape, it can be thinly sliced, grated or finely chopped. Add it near the end of preparation or immediately before serving.
Gentle warmth can help release the aroma, but prolonged cooking and intense direct heat should be avoided.
Recommended culinary uses include:
- slicing or grating over fresh pasta, risotto or polenta;
- serving with scrambled, poached or fried eggs;
- combining with potato purée or roasted potatoes;
- incorporating into butter, cream and mild cheese preparations;
- finely chopping into sauces, fillings or compound butter;
- serving with poultry, veal, beef or game.
For a balanced result, use restrained seasoning and avoid strongly acidic, heavily spiced or intensely flavoured ingredients that may overpower the natural aroma.

Storage After Delivery
