Fresh Tuber melanosporum Slices for Culinary Use

Fresh Black truffle slices are prepared from fresh Tuber melanosporum and cut to approximately 1 mm for convenient culinary use. This format suits recipes where thin, ready-prepared slices are preferred and whole-truffle presentation is not required.

Tuber melanosporum, also known as the Périgord Black Truffle, is valued for its earthy, woodland-like, nutty and savoury aroma. Aroma, colour and marbling vary with maturity, freshness, growing conditions, season and harvest.

Season and Availability

Fresh Slice Format

The product is prepared in slices approximately 1 mm thick for finishing pasta, risotto, eggs, potatoes, creamy sauces, mild cheeses, poultry and meat dishes. Slices may be served whole, divided or finely chopped. The selected pack size refers to total product weight, not an exact number of slices.

Natural Slice Variation

Slices naturally vary in diameter, outline, thickness, interior colour and marbling because every original specimen differs in size, shape and maturity. Smaller and partial slices may be present. These variations do not indicate another species or reduced culinary suitability.

Aroma, Flavour and Texture

Fresh Tuber melanosporum typically has an earthy woodland aroma with savoury, nutty, mildly musky and sometimes cocoa-like notes. The interior is generally dark brown to nearly black with fine branching pale veins. Thin slices should remain firm when fresh and in suitable condition.

How to Use Fresh Black Truffle Slices

Add the slices to gently warmed food near the end of preparation or shortly before serving. Gentle warmth can release the aroma; avoid prolonged cooking and intense direct heat.

  • Arrange over pasta, risotto, polenta or eggs.
  • Combine with potatoes, butter, cream or mild cheeses.
  • Chop into sauces, fillings or compound butter.
  • Serve with poultry, veal, beef or game.

As a general guide, approximately 5–10 g per person may suit pasta, risotto, eggs or potatoes. The appropriate quantity depends on maturity, aroma intensity, recipe and preference. Use restrained seasoning and avoid strongly acidic, heavily spiced or intensely flavoured ingredients.

Storage After Delivery

Refrigerate immediately at approximately +2°C to +4°C. Keep the slices in their original clean, closed food-safe packaging and minimise exposure to air and moisture.

After opening, refrigerate remaining slices without delay and consume them as soon as possible. Follow any use-by date and storage instructions supplied with the product. Inspect the aroma, colour, texture, packaging and overall condition before use.
