What B Grade Means

B Grade describes the physical commercial selection of the whole truffles. Individual specimens may be smaller or show greater natural variation in size, shape, surface and overall presentation while remaining suitable for culinary preparation.

Commercial grade describes physical selection and does not guarantee a specific aroma intensity, flavour intensity or sensory superiority.

Appearance, Aroma and Texture

Tuber brumale typically has a dark brown to black exterior and a dark grey to black interior crossed by pale veins. Its aroma and flavour are characteristic of the species, with natural variation between individual truffles and production batches.

Freezing naturally changes the texture of fresh truffle, and the product may become softer after defrosting. Aromatic intensity may also change after freezing and defrosting.

How to Use Frozen B Grade Black Winter Truffle

Defrost only the quantity required under refrigeration and use it promptly. Whole Tuber brumale can be grated, chopped or sliced where suitable for pasta, risotto, eggs, potatoes, butter preparations, sauces, fillings, poultry and meat dishes. Where practical, add the truffle toward the end of cooking to limit unnecessary aroma loss from prolonged high heat.

Frozen Storage

Transfer the product to a freezer promptly after delivery and keep it stored at or below −18°C. Keep the package sealed to reduce dehydration and absorption of surrounding odours. Do not refreeze thawed product unless the current product label specifically permits it.
