What A Grade Means
A Grade describes the physical commercial selection of the whole truffles rather than a guaranteed level of aroma or flavour intensity. Natural variation in shape, size, surface texture, colour and condition occurs between individual truffles and batches.
Appearance, Aroma and Texture
Tuber melanosporum typically has a dark brown to black exterior and a dark grey to black interior crossed by pale branching veins. Its aroma and flavour are characteristic of the species, with natural variation between individual truffles and batches.
Freezing naturally changes the texture of fresh truffle, and the product may become softer after defrosting. Aromatic intensity may also change after freezing and defrosting.
How to Use Frozen A Grade Black Truffle
Defrost only the quantity required under refrigeration and use it promptly. The truffle can be sliced, grated or chopped for pasta, risotto, eggs, potatoes, butter preparations, cream-based sauces, poultry and meat dishes. Where practical, add it toward the end of cooking to limit unnecessary aroma loss from prolonged high heat.
Frozen Storage
Transfer the product to a freezer promptly after delivery and keep it stored at or below −18°C. Keep the package sealed to reduce dehydration and absorption of surrounding odours. Do not refreeze thawed product unless the current product label specifically permits it.

Frozen products are prepared for dispatch in insulated transport packaging with cooling materials. Available courier services, shipping charges and estimated transit times depend on the destination and the service selected at checkout.
