Big Fresh White Truffle – Tuber magnatum

This big-size selection consists of whole specimens of fresh, wild-harvested Tuber magnatum Pico. Individual truffles typically weigh between 20 and 100 grams, making them suitable for elegant presentation, thin shaving and professional kitchen service.

The truffles may have naturally regular or irregular shapes. Minor superficial scratches or clean cuts can occur during harvesting, cleaning and inspection without affecting their intended culinary use. Colour, shape, marbling, moisture and aroma vary naturally between individual truffles and seasonal batches.

What Big Size Means

  • Species: Fresh white truffle, Tuber magnatum Pico
  • Individual weight: Typically 20–100 g per truffle
  • Form: Whole fresh truffles
  • Shape: Naturally regular or irregular
  • Selection: Checked for firmness, condition and species conformity
  • Intended use: Presentation, thin shaving and professional food service

Big size describes the physical dimensions and individual weight of the truffle. It does not guarantee stronger aroma. Aromatic intensity depends primarily on maturity, freshness, storage and the characteristics of the individual seasonal batch. Commercial grade and specimen size should always be evaluated according to the written product specification and intended use, as explained in our guide to fresh truffle grades.

Aroma, Flavour and Culinary Use

Fresh Tuber magnatum develops a pronounced and complex aroma, often described as earthy, savoury and slightly garlicky. Its flavour is delicate and is best appreciated when the truffle is sliced very thinly.

Shave the truffle immediately before serving over warm, finished dishes such as pasta, risotto, eggs, potatoes, polenta or mild cheeses. The warmth of the dish helps release the aroma. Avoid prolonged cooking, frying or boiling, as high heat reduces the volatile aromatic compounds.

Natural Seasonal Variation

Fresh truffles are wild seasonal products. Size, shape, exterior colour, internal marbling, moisture and aromatic intensity can vary from one specimen and batch to another. Product photographs show representative examples rather than the exact truffles supplied.
