What EXTRA Grade Means
EXTRA Grade represents the highest presentation grade within the available seasonal harvest. The selection consists of whole, firm truffles with a regular or well-formed natural shape and no serious visible defects.

Aroma, Flavour and Texture
Fresh Tuber aestivum has a delicate earthy and woodland aroma with mild nutty and mushroom-like notes. As it matures, the interior develops a pale beige to light brown colour with fine natural marbling.
The texture should be firm when fresh. Its aroma becomes more noticeable after slicing or shaving, particularly when the truffle is served over warm food.
How to Use Fresh Summer Truffle
Clean the truffle gently immediately before use. Slice or shave it as thinly as possible and add it at the end of preparation or shortly before serving. Avoid prolonged cooking and intense direct heat, which can reduce its delicate aroma.
Recommended pairings include:

- scrambled, poached or fried eggs;
- butter, cream and mild cheeses;
