Fresh Tuber borchii Vittad., also known as spring white or bianchetto truffle, is a seasonal European truffle with earthy, mushroom-like and distinctly garlicky notes. Its pale exterior, finely marbled interior and firm texture make it suitable for thin shaving, slicing and grating over warm finished dishes.
This A Grade selection consists of whole fresh truffles chosen for good shape, firmness and culinary presentation. Individual specimens typically weigh approximately 8–20 g and may show minor natural cuts, scratches or surface irregularities. Customers select the total pack size, while the number of truffles supplied depends on the natural weight of the available specimens.

A Grade describes physical selection, appearance and intended culinary use. It is a commercial selection standard and does not guarantee stronger aroma.

Aroma, Flavour and Texture
The exterior may range from pale cream and ochre to light reddish-brown. The interior may vary from pale cream to hazelnut or reddish-brown, crossed by fine whitish marbling. Fresh Tuber borchii can develop earthy, mushroom-like, garlicky and gently nutty notes. The flesh is firm and suitable for shaving, slicing or fine grating.
Colour, marbling, moisture, firmness and aromatic intensity vary naturally between individual wild truffles and seasonal batches.
How to Use Fresh Tuber borchii
Clean gently only shortly before use. Remove loose soil with a soft brush and use a small amount of cold running water only when necessary. Do not soak. Pat dry with clean absorbent paper.
Shave, slice or finely grate over warm finished dishes. Add near the end of preparation or immediately before serving. Avoid prolonged cooking, frying or strong direct heat.
Pairs well with pasta, risotto, eggs, potatoes, creamy soups, butter, cream, mild cheeses, fish and poultry.
Freshness, Packing and Delivery
Each batch is inspected before dispatch. The truffles are protected with clean absorbent material, placed in food-safe protective packaging and packed inside insulated packaging with cooling materials.

Storage After Delivery
Refrigerate promptly at approximately +2°C to +4°C. Store dry in a clean, closed, food-safe container with clean absorbent paper. Inspect regularly and replace the paper whenever it becomes damp. Keep away from condensation and strongly scented foods. Do not wash, slice or grate in advance.
Plan to use the truffles promptly, preferably within approximately 5–8 days of receipt, depending on maturity and condition. This is practical guidance rather than a guaranteed shelf life.
