Fresh Black truffle (Tuber melanosporum), also known as the Périgord Black Truffle, is valued for its earthy aroma, firm texture and complex savoury flavour. It suits pasta, risotto, eggs, potatoes, butter-based sauces and refined meat dishes.

Season and Availability
The main European season for fresh Tuber melanosporum generally runs from December to March. Exact timing, maturity and availability vary by region, weather and seasonal conditions.
What A Grade Means
A Grade balances attractive presentation with culinary versatility. It consists predominantly of whole, firm specimens with generally regular natural shapes and good physical condition. Minor superficial scratches, small clean cuts and natural shape irregularities may be present.

Individual Truffle Size
A Grade specimens generally weigh approximately 15–100 g each and measure around 3–7 cm in diameter. Natural variation in weight, diameter, shape, texture and appearance is expected. The selected quantity refers to total supplied weight, not an exact number of truffles.
Aroma, Flavour and Texture
Fresh Tuber melanosporum typically has an earthy woodland aroma with savoury, nutty, mildly musky and sometimes cocoa-like notes. Its exterior is dark brown to black with small polygonal warts; the interior is generally dark brown to nearly black with fine branching pale veins. Aroma, colour and marbling vary naturally.

How to Use Fresh Black truffle
Clean shortly before use, then slice, shave or finely grate the truffle and add it near the end of preparation or before serving. Gentle warmth can release its aroma; avoid prolonged cooking and intense direct heat.
- Shave over pasta, risotto, polenta or eggs.
- Pair with potatoes, butter, cream or mild cheeses.
- Serve with poultry, veal, beef or game.
- Use in sauces, fillings or compound butter.

Freshness, Packing and Delivery
Fresh truffles are inspected, wrapped in absorbent paper and placed in food-safe packaging. Orders use Express Delivery in Insulated Packaging with cooling materials where appropriate. Storage After Delivery
Refrigerate immediately at approximately +2°C to +4°C. Wrap each specimen in clean, dry absorbent paper and place it in a clean, closed glass container. Replace the paper daily or whenever damp and inspect regularly.
