Fresh Bagnoli Truffle – Tuber mesentericum (B Grade)
B Grade Tuber mesentericum for Versatile Culinary Use
Fresh Bagnoli Truffle (Tuber mesentericum) is a seasonal truffle with a distinctive aromatic profile, dark exterior and characteristic pale internal veining. B Grade offers the same species identity in a practical commercial selection intended primarily for cooking, grating, sauces and other preparations where perfect whole-truffle presentation is not essential. Explore the complete Bagnoli Truffle – Tuber mesentericum collection to compare the available grades.
Terra Ross B Grade truffles are individually inspected for freshness, firmness and overall condition. The grade may include smaller, irregular, cut, scratched or partially broken specimens within the defined commercial specification.
What B Grade Means
B Grade is selected primarily for culinary performance rather than premium visual presentation. Individual truffles generally weigh approximately 5–15 g and measure approximately 1–3 cm in diameter. Rounded and irregular natural shapes are accepted, and up to approximately 30% of the selection may consist of cut, scratched or broken truffles.
Rotten, excessively soft or seriously worm-damaged specimens are excluded during selection.
Aroma, Flavour and Texture
Fresh Tuber mesentericum has a characteristic earthy, woodland and phenolic aromatic profile. The interior is typically dark grey to black with contrasting pale veins, although colour and marbling vary naturally between individual specimens.
The texture should be firm when fresh and in suitable condition. Commercial grade describes physical selection and presentation and does not by itself determine aroma intensity.
How to Use B Grade Bagnoli Truffle
B Grade is particularly suitable when the truffle will be grated, chopped, incorporated into sauces or combined with other ingredients rather than presented whole.
Recommended culinary uses include:
- grated over pasta and risotto;
- used with eggs and potatoes;
- incorporated into sauces and savoury preparations;
- combined with mushrooms and seasonal vegetables;
- used in fillings and composed dishes;
- paired with poultry, beef, veal or game.
Use balanced seasoning so that the characteristic aroma of Tuber mesentericum remains noticeable.
Freshness, Packing and Delivery
Every order is inspected before dispatch. The truffles are wrapped in absorbent paper, placed in food-safe protective packaging and packed in insulated packaging with cooling materials. You can also view the fresh truffles currently in season before ordering.
Storage After Delivery
Open the packaging promptly after delivery, inspect the truffles and refrigerate them at approximately +2°C to +4°C. Keep them dry in a sealed glass container lined with clean absorbent paper.
Replace the paper daily or whenever it becomes damp. For the best aroma, flavour and texture, use the truffles promptly, preferably within 5–8 days depending on their condition when received.
Do not wash, slice, grate or otherwise prepare the truffles until shortly before use.
